Coconut Caramel Balls

Ingredients:

2 x 200gm pkt Jersey caramels
200gm butter
1 cup chopped toasted pecans
½ cup chopped red glace cherries (1 pkt)
Coconut for rolling

Method:

  1. Melt caramels and butter in saucepan (medium heat), may separate but will come together with extra stirring.
  2. Add cherries and pecans, cool in fridge until pliable, not hard
  3. Spoon level tablespoons of mixture into balls and roll in coconut, put on trays
  4. Place trays back in the fridge until hard and chewy.

Makes approximately 30.
